Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups cheese tortellini
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Lightly spray the crockpot insert for easier cleanup (optional).
  2. Season the chicken breasts with salt, pepper, and Italian seasoning and place them in the crockpot.
  3. Pour in the chicken broth and add the minced garlic.
  4. Cover and cook on low for 6-7 hours until the chicken is tender.
  5. Shred the chicken with two forks and return it to the crockpot.
  6. Stir in the heavy cream and grated Parmesan until smooth.
  7. Add the cheese tortellini and cook on high for about 30 minutes until the pasta is soft.
  8. Adjust the seasoning, garnish with fresh parsley, and serve hot.

Notes

For a twist, add spinach, broccoli, or sun-dried tomatoes. Store leftovers in airtight containers for up to 3-4 days.
