- 1 ½ lbs chicken breast (about 4 medium breasts)
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion granules
- 1 teaspoon Italian seasoning mix
- ½ teaspoon paprika
- ¼ teaspoon red chili flakes
- 1 ½ cups chicken broth
- 1 lb cheese tortellini
- 1 cup mozzarella cheese (shredded)
- ½ cup heavy cream
- 2 cups baby spinach
- ⅓ cup Parmesan cheese (grated)
Instructions
- Prep the Slow Cooker: Spray the inside of your slow cooker with olive oil to prevent sticking.
- Layer the Chicken: Place the chicken breasts in a single layer at the bottom.
- Add Sauce and Spices: Pour the marinara sauce over the chicken, sprinkling garlic powder, onion granules, Italian seasoning, paprika, and red chili flakes on top.
- Cook: Cover and set the slow cooker to LOW for about 4 hours, allowing the chicken to become tender.
- Shred the Chicken: Once cooked, shred the chicken using forks and return it to the slow cooker, mixing well with the sauce.
- Incorporate Tortellini and Cheese: Add the cheese tortellini, mozzarella, and heavy cream. Stir thoroughly.
- Final Cook: Cook on LOW for an additional 30 minutes, allowing the flavors to meld.
- Add Spinach: Stir in the baby spinach and cook for 10 more minutes until wilted.
- Finish: Add grated Parmesan cheese, taste, and adjust seasoning as necessary.
Notes
Consider browning the chicken before adding it to the slow cooker for enhanced flavor. Adjust spices to your preference.
