  • 4 medium potatoes, peeled and diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain the excess fat.
  2. Transfer the browned beef to your crockpot.
  3. Add the diced potatoes, sliced carrots, chopped celery, chopped onion, and pour in the beef broth.
  4. Season with garlic powder, onion powder, salt, and pepper to taste.
  5. Cook on low for 6-8 hours or high for 3-4 hours until the vegetables are tender.
  6. Just before serving, stir in the heavy cream and shredded cheddar cheese until melted and creamy.
