- 1 lb. boneless, skinless chicken breasts/thighs
- 1 (4 oz.) can diced green chiles
- 1 (15 oz.) can cannellini beans (drained)
- 1 (15 oz.) can great northern beans (drained)
- 2 tbsp fresh cilantro (chopped)
- 2 tbsp lime juice
- 2 cups chicken broth
- 1 cup chopped onion
- 3 cloves garlic (minced)
- 1/2 tsp cumin
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp chili powder
- 8 oz. cream cheese (softened)
- Optional: Fresh lime wedges and avocado for garnish
Instructions
- Combine Ingredients: Start by adding all ingredients, except for the chicken, into your slow cooker. Give everything a good stir to combine.
- Add Chicken: Place the chicken on top, covering it with the sauce and bean mixture.
- Slow Cook: Cover the slow cooker and set it to cook on low for 7 hours or on high for 4 hours.
- Shred Chicken: Once cooked, shred the chicken using two forks, mixing it into the chili for a cohesive texture.
- Serve: Enjoy with a dollop of sour cream and a side of crunchy tortilla chips!
Notes
Customize spice levels with additional chili powder or cayenne. For a creamier texture, add more chicken broth when serving.
