  • 1 (15 oz.) can cannellini beans (drained)
  • 1 (15 oz.) can great northern beans (drained)

  • 2 tbsp lime juice
  • 2 cups chicken broth
  • 1 cup chopped onion
  • 3 cloves garlic (minced)
  • 1/2 tsp cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder
  • 8 oz. cream cheese (softened)
  • Optional: Fresh lime wedges and avocado for garnish

Instructions

  1. Combine Ingredients: Start by adding all ingredients, except for the chicken, into your slow cooker. Give everything a good stir to combine.
  2. Add Chicken: Place the chicken on top, covering it with the sauce and bean mixture.
  3. Slow Cook: Cover the slow cooker and set it to cook on low for 7 hours or on high for 4 hours.
  4. Shred Chicken: Once cooked, shred the chicken using two forks, mixing it into the chili for a cohesive texture.
  5. Serve: Enjoy with a dollop of sour cream and a side of crunchy tortilla chips!

Notes

Customize spice levels with additional chili powder or cayenne. For a creamier texture, add more chicken broth when serving.
