Description

A comforting and hearty dish featuring kielbasa, green beans, and baby potatoes cooked to perfection in a slow cooker.


Ingredients

  • 1 pound kielbasa, sliced
  • 1 pound fresh green beans, trimmed
  • 1 pound baby potatoes, halved
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

  1. In your crockpot, place the sliced kielbasa, green beans, and halved baby potatoes.
  2. Heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sauté until soft and fragrant (about 3-5 minutes).
  3. Transfer the sautéed onion and garlic mixture to the crockpot.
  4. Pour in the chicken broth, and season with salt and pepper.
  5. Give everything a good stir to combine.
  6. Cover and cook on low for 6-8 hours, or until the vegetables are tender.

Notes

For lighter options, substitute kielbasa with turkey or chicken sausage. You can also replace green beans with asparagus or broccoli.
