- 1 pound kielbasa, sliced
- 1 pound fresh green beans, trimmed
- 1 pound baby potatoes, halved
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup chicken broth
Instructions
- In your crockpot, place the sliced kielbasa, green beans, and halved baby potatoes.
- Heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sauté until soft and fragrant (about 3-5 minutes).
- Transfer the sautéed onion and garlic mixture to the crockpot.
- Pour in the chicken broth, and season with salt and pepper.
- Give everything a good stir to combine.
- Cover and cook on low for 6-8 hours, or until the vegetables are tender.
Notes
For lighter options, substitute kielbasa with turkey or chicken sausage. You can also replace green beans with asparagus or broccoli.
