Ingredients

Scale
  • 1 lb chicken breast, diced
  • 1 cup peanuts
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup soy sauce
  • 1/4 cup hoisin sauce
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil

  2. In a separate bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, minced garlic, minced ginger, and red pepper flakes.
  3. Pour the sauce over the chicken and veggies in the crockpot, ensuring everything is evenly coated.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
