A cozy and cheesy lasagna soup made effortlessly in a slow cooker, perfect for busy nights.


Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups beef broth
  • 2 cups water
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. In a skillet, brown the ground beef or sausage with onion and garlic until cooked through. Drain excess fat.
  2. Transfer the meat mixture to a slow cooker. Add crushed tomatoes, beef broth, water, Italian seasoning, salt, and black pepper. Stir to combine.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in broken lasagna noodles.
  5. When the noodles are tender, stir in ricotta, mozzarella, and Parmesan cheese until melted and combined.
  6. Serve hot, garnished with fresh basil or parsley.

Notes

For best texture, add noodles at the end of cooking. Great for meal prep and leftovers.
