- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can diced tomatoes
- 1 cup beef broth
- 2 cups pasta (elbow macaroni or penne)
- 1 cup cheese (cheddar or your favorite)
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- In a skillet over medium heat, brown the ground beef along with the diced onion and minced garlic.
- Transfer the beef mixture to your crockpot.
- Add in the taco seasoning, diced tomatoes, and beef broth. Stir everything to combine.
- Cover and cook on low for 4-5 hours.
- About 30 minutes before you’re ready to eat, stir in the pasta.
- Next, stir in the cheese until it melts into the mixture.
- Season with salt and pepper to your liking.
- If desired, garnish with freshly chopped cilantro before serving.
Notes
For a delightful serving suggestion, top with extra cheese and diced jalapeños. Pairs well with tortilla chips or fresh salad.
