Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup beef broth
  • 2 cups pasta (elbow macaroni or penne)
  • 1 cup cheese (cheddar or your favorite)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a skillet over medium heat, brown the ground beef along with the diced onion and minced garlic.
  2. Transfer the beef mixture to your crockpot.
  3. Add in the taco seasoning, diced tomatoes, and beef broth. Stir everything to combine.
  4. Cover and cook on low for 4-5 hours.
  5. About 30 minutes before you’re ready to eat, stir in the pasta.
  6. Next, stir in the cheese until it melts into the mixture.
  7. Season with salt and pepper to your liking.
  8. If desired, garnish with freshly chopped cilantro before serving.
