- 1 pound boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
- Chopped cilantro (for garnish)
Instructions
- In your Crockpot, add the chicken breasts, drained white beans, corn, diced tomatoes, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is fully cooked.
- Once cooked, remove the chicken, shred it with two forks, and return it to the pot.
- Stir in the sour cream and shredded cheese (if using), allowing it to meld into a creamy goodness.
- Ladle into bowls and garnish with chopped cilantro.
Notes
For a twist, you can swap out the chicken for tofu or use vegetable broth for a vegetarian version.
