Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)
  • Chopped cilantro (for garnish)

Instructions

  1. In your Crockpot, add the chicken breasts, drained white beans, corn, diced tomatoes, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
  2. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is fully cooked.
  3. Once cooked, remove the chicken, shred it with two forks, and return it to the pot.
  4. Stir in the sour cream and shredded cheese (if using), allowing it to meld into a creamy goodness.
  5. Ladle into bowls and garnish with chopped cilantro.
