Description

Delightful fusion of classic pecan pie flavors in cookie form, combining buttery richness, nutty crunch, and sweet gooey goodness.


Ingredients

  • 1/2 cup butter (softened)
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cups chopped pecans
  • 1 tsp vanilla extract (for filling)
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • A pinch of nutmeg
  • A pinch of salt (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl or stand mixer, cream together the softened butter, oil, granulated sugar, and powdered sugar until smooth and fluffy.
  3. Mix in the egg and vanilla extract until fully combined.
  4. Gradually add the flour, salt, and baking powder, mixing until just combined.
  5. Using a large cookie scooper, form 9 equally sized cookie balls and place them on the prepared baking sheet. Gently flatten each ball to about 1 inch in thickness.
  6. In a saucepan, melt the 5 tablespoons of butter for the filling. Stir in the brown sugar, chopped pecans, vanilla extract, heavy cream, cinnamon, nutmeg, and salt. Cook until the mixture is bubbly and slightly thickened.
  7. Using a 1/4 measuring cup, press down the center of each cookie to create a small well, then fill each with the pecan pie mixture.
  8. Bake in your preheated oven for 8-9 minutes. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to five days. Can freeze for up to three months.
