Description

Delightful mini potato skins packed with flavorful cheese and bacon, perfect for appetizers at parties or casual gatherings.


Ingredients

  • Small potatoes
  • Cheddar cheese
  • Bacon bits (or turkey bacon)
  • Sour cream (or Greek yogurt)
  • Green onions
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the small potatoes clean and poke several holes in each with a fork.
  3. Rub the potatoes with olive oil, and sprinkle them generously with salt and pepper before placing them on a baking sheet.
  4. Bake in the oven for 20-25 minutes, until tender.
  5. Once cool enough to handle, cut each potato in half and carefully scoop out a small portion of the flesh.
  6. Fill each potato skin generously with cheddar cheese and bacon bits.
  7. Return them to the oven and bake for an additional 10-15 minutes, or until the cheese is melted.
  8. Top with a dollop of sour cream and a sprinkle of sliced green onions before serving.

Notes

For a healthier option, substitute turkey bacon for regular bacon. These mini potato skins are best served hot out of the oven.
