Ingredients
- Small potatoes
- Cheddar cheese
- Bacon bits (or turkey bacon)
- Sour cream (or Greek yogurt)
- Green onions
- Olive oil
- Salt
- Pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the small potatoes clean and poke several holes in each with a fork.
- Rub the potatoes with olive oil, and sprinkle them generously with salt and pepper before placing them on a baking sheet.
- Bake in the oven for 20-25 minutes, until tender.
- Once cool enough to handle, cut each potato in half and carefully scoop out a small portion of the flesh.
- Fill each potato skin generously with cheddar cheese and bacon bits.
- Return them to the oven and bake for an additional 10-15 minutes, or until the cheese is melted.
- Top with a dollop of sour cream and a sprinkle of sliced green onions before serving.
Notes
For a healthier option, substitute turkey bacon for regular bacon. These mini potato skins are best served hot out of the oven.
