  • 1 can (14 oz) diced tomatoes
  • 1/4 cup green olives, sliced
  • 1/4 cup raisins
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Cooked white rice for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced onion and bell pepper; sauté until softened, about 4-5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Increase the heat to medium-high and add the ground beef, cooking until browned, about 6-8 minutes.
  5. Mix in the diced tomatoes, olives, raisins, cumin, oregano, salt, and pepper.
  6. Reduce the heat to low, cover, and let it simmer for about 20 minutes.
  7. Serve hot over cooked white rice.

Notes

For added flavor, let the picadillo sit for a day before serving. You can substitute ground turkey or chicken for a leaner option.
