- 1/2 cup unsalted butter
- 3 large eggs
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 cup fresh raspberries
- 1/2 cup chocolate ganache
Instructions
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- Melt the dark chocolate and butter together until smooth.
- Whisk the eggs and granulated sugar until light and fluffy, about 3-5 minutes.
- Fold in the melted chocolate mixture and sift in the flour, mixing gently until just combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes. Allow the cake to cool before continuing.
- For the mousse, whip the heavy cream with powdered sugar until soft peaks form.
- Fold in fresh raspberries until well incorporated.
- Once the cake has cooled, layer the raspberry mousse evenly on top.
- Drizzle with chocolate ganache before serving.
