Ingredients

  • 2 pounds of potatoes, peeled and cubed
  • 1 cup of milk
  • 4 tablespoons of butter
  • 1/2 cup of grated cheese (cheddar or your choice)
  • 1 onion, chopped
  • Salt and pepper to taste
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in a pot of salted water until tender, usually about 15-20 minutes. Drain and return them to the pot.
  3. Add in the milk, butter, cheese, salt, and pepper. Mash everything together until you achieve a smooth and creamy consistency.
  4. Sauté the chopped onion in a skillet over medium heat until golden brown, about 5-7 minutes.
  5. Assemble by spreading half of the mashed potato mixture in the bottom of the pie crust, followed by the sautéed onions, and then the remaining potato mixture on top.
  6. Bake in your preheated oven for 25-30 minutes, or until the top is beautifully golden.
