- 2 tablespoons unsalted butter
- 4 ounces cream cheese (dairy-free optional)
- 1/4 cup heavy whipping cream (coconut cream for lower carbs)
- 1 cup shredded sharp cheddar cheese
- 1 pound ground beef (or ground turkey/chicken)
- 2 tablespoons taco seasoning (homemade or low-sodium)
- 4 low-carb tortillas (like Mission Carb Balance or almond flour)
- 1 cup sour cream (or Greek yogurt)
- 1 cup shredded lettuce (iceberg or romaine)
- 1 medium tomato (or bell peppers)
- 1 cup extra cheddar cheese (or pepper jack)
- 1/4 cup cilantro (or parsley)
- 1/2 cup jalapeño slices (optional)
- 1 tablespoon olive oil (or preferred cooking oil)
Instructions
- In a pan, melt butter over medium heat. Add cream cheese and heavy whipping cream, stirring until smooth. Mix in 1 cup of shredded cheddar cheese until melted. Set aside.
- In a different skillet, heat olive oil over medium-high heat. Brown the ground beef until fully cooked. Drain excess fat, then stir in taco seasoning and a splash of water. Simmer for about 5 minutes.
- Lightly oil another pan and heat over medium heat. Warm each low-carb tortilla for 15-20 seconds on each side.
- Lay a tortilla flat and start layering: add beef mixture, cheese sauce, lettuce, tomato, cilantro, jalapeño, and sour cream. Fold the edges over the filling.
- In a skillet, place the wrapped side down to toast for 3-4 minutes until golden brown. Flip and repeat on the other side.
- Serve warm, sliced in half for presentation.
Notes
Store leftovers in airtight containers. Refrigerate for up to three days or freeze for longer storage.
