Description

Indulgent keto-friendly roll-ups filled with savory beef, melted cheese, and colorful veggies wrapped in low-carb tortillas.


Ingredients

  • 1 lb thinly sliced ribeye or sirloin beef
  • 8 oz provolone cheese, sliced
  • 1 cup mixed bell peppers, chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 low-carb tortillas

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chopped onion and bell peppers. Sauté for about 5–7 minutes until they are softened and fragrant.
  3. Raise the heat to medium-high and add the sliced beef. Season with salt and pepper. Cook for 3–5 minutes, until the beef is browned.
  4. Lower the heat and place provolone slices over the beef mixture. Allow the cheese to melt completely.
  5. Spoon the beef and cheese mixture onto each tortilla, rolling them tightly.
  6. Return the roll-ups to the skillet, seam-side down, cooking until they are golden brown all around (about 3-4 minutes total).
