- 1 lb thinly sliced ribeye or sirloin beef
- 8 oz provolone cheese, sliced
- 1 cup mixed bell peppers, chopped
- 1 medium sweet onion, chopped
- 2 tbsp extra virgin olive oil
- 4 low-carb tortillas
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the chopped onion and bell peppers. Sauté for about 5–7 minutes until they are softened and fragrant.
- Raise the heat to medium-high and add the sliced beef. Season with salt and pepper. Cook for 3–5 minutes, until the beef is browned.
- Lower the heat and place provolone slices over the beef mixture. Allow the cheese to melt completely.
- Spoon the beef and cheese mixture onto each tortilla, rolling them tightly.
- Return the roll-ups to the skillet, seam-side down, cooking until they are golden brown all around (about 3-4 minutes total).
Notes
Great for meal prep and suitable for leftovers. Pair with a side salad or low-carb dipping sauces.
