Description
A delicious, low-carb twist on the classic Philly cheesesteak, featuring tender beef, gooey cheese, and colorful veggies wrapped in low-carb tortillas.

- 1 lb thinly sliced ribeye or sirloin beef
- 8 oz provolone cheese, sliced
- 1 cup mixed bell peppers, chopped
- 1 medium sweet onion, chopped
- 2 tbsp extra virgin olive oil
- 4 low-carb tortillas (almond flour or coconut flour)
Instructions
- Prep the ingredients: Slice the beef into thin strips and chop the bell peppers and onion.
- Sauté the vegetables: Heat the olive oil in a skillet over medium heat. Add the onions and bell peppers and cook until softened, about 5-7 minutes.
- Cook the beef: Increase the heat to medium-high, add the sliced beef, and season with salt and pepper. Cook until browned, about 3-5 minutes.
- Melt the cheese: Reduce the heat to low and place the provolone slices over the beef mixture. Allow the cheese to melt completely.
- Assemble the roll-ups: Spoon the beef-cheese mixture onto each tortilla and roll tightly.
- Brown the roll-ups: Return roll-ups seam-side down to the skillet and cook until golden brown on all sides, about 3-4 minutes total.
Notes
For added flavor, consider marinating the beef beforehand for an hour or two. If you’re out of provolone, mozzarella or cheddar would also make great substitutes.
