Description

A nutritious and flavorful chicken dish filled with creamy spinach and feta cheese, perfect for a healthy dinner.


Ingredients

  • 4 boneless skinless chicken breasts (approx. 170–200g each)
  • 1 tbsp olive oil (for sautéing)
  • 2 cups baby spinach (about 60g)
  • 3 garlic cloves, minced
  • ½ cup crumbled feta cheese (about 75g)
  • ¼ cup cream cheese, softened (about 60g)
  • ½ tsp dried oregano
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for pan-searing)
  • Toothpicks or kitchen twine for sealing

Instructions

  1. In a skillet, heat 1 tbsp olive oil over medium heat.
  2. Sauté the minced garlic for about 30 seconds until fragrant.
  3. Add in the baby spinach and cook until wilted, about 2–3 minutes.
  4. Transfer the spinach mixture to a bowl.
  5. Stir in the crumbled feta cheese, softened cream cheese, oregano, salt, and black pepper until well combined.
  6. Slice each chicken breast to create a deep pocket without cutting all the way through.
  7. Fill each chicken pocket with the spinach-feta mixture.
  8. Use toothpicks or kitchen twine to seal the chicken securely.
  9. In a skillet, heat 1 tbsp olive oil over medium-high heat.
  10. Sear the chicken for 2–3 minutes per side or until golden brown.
  11. Transfer the seared chicken to a baking dish.
  12. Bake in a preheated oven at 375°F (190°C) for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
  13. Let the chicken rest for 5 minutes before slicing and serving.

Notes

Use fresh spinach for better flavor and texture. Sear the chicken well to lock in juices.
