- 6 large eggs
- 0.5 cup full-fat Greek yogurt (unsweetened and plain)
- 1 tablespoon baking powder (preferably aluminum-free)
- 0.25 cup melted butter or coconut oil
- 0.25 teaspoon salt
- 0.5 teaspoon xanthan gum or psyllium husk powder
- 0.5 cup finely ground almond flour (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the eggs and Greek yogurt until smooth.
- Stir in the melted butter or coconut oil, baking powder, salt, and xanthan gum (or psyllium husk).
- If you’re using almond flour, gradually mix it in at this stage to enhance texture.
- Ensure everything is well combined; the batter should be slightly thick.
- Pour the batter into a greased loaf pan and smooth the top with a spatula.
- Bake for 30-35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- Allow to cool slightly in the pan before transferring the loaf to a wire rack to cool completely.
Notes
Store the bread wrapped in plastic wrap or aluminum foil at room temperature for up to 3 days. For longer storage, slice and freeze in an airtight container.
