Ingredients

  • 6 large eggs
  • 0.5 cup full-fat Greek yogurt (unsweetened and plain)
  • 1 tablespoon baking powder (preferably aluminum-free)
  • 0.25 cup melted butter or coconut oil
  • 0.25 teaspoon salt
  • 0.5 teaspoon xanthan gum or psyllium husk powder
  • 0.5 cup finely ground almond flour (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs and Greek yogurt until smooth.
  3. Stir in the melted butter or coconut oil, baking powder, salt, and xanthan gum (or psyllium husk).
  4. If you’re using almond flour, gradually mix it in at this stage to enhance texture.
  5. Ensure everything is well combined; the batter should be slightly thick.
  6. Pour the batter into a greased loaf pan and smooth the top with a spatula.
  7. Bake for 30-35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly in the pan before transferring the loaf to a wire rack to cool completely.

Notes

Store the bread wrapped in plastic wrap or aluminum foil at room temperature for up to 3 days. For longer storage, slice and freeze in an airtight container.
