Description

A comforting and easy casserole that combines shredded chicken, creamy soup, and a crunchy cracker topping.


Ingredients

  • 2 cups shredded cooked chicken (rotisserie chicken works wonderfully)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 sleeve (about 30) buttery round crackers, crushed
  • ½ cup (1 stick) unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch baking dish to prevent sticking.
  3. In a large bowl, combine the shredded chicken, cream of chicken soup, and sour cream until the mixture is smooth.
  4. Spread the chicken mixture evenly in the prepared baking dish.
  5. In another bowl, mix the crushed crackers with melted butter until fully coated and crumbly.
  6. Sprinkle the buttery cracker mixture evenly over the chicken layer.
  7. Bake in the oven for about 30–35 minutes, or until the casserole is hot and bubbly, topped with a beautiful golden brown.
  8. Allow to cool for 5 minutes before serving.

Notes

Pairs well with green salad or roasted vegetables. Can freeze leftovers for up to 3 months.
