Description

A delightful dish with tender, shredded chicken in a savory teriyaki sauce, perfect for busy weeknights.

Ingredients

Scale
  • 2 pounds chicken breast (or thighs)
  • 1 cup teriyaki sauce
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 bell pepper, sliced
  • 1 onion, chopped
  • Salt and pepper to taste
  • Cooked rice or noodles (to serve)

Instructions

  1. Place the chicken breasts at the bottom of your crockpot.
  2. In a mixing bowl, combine the teriyaki sauce, minced garlic, minced ginger, sliced bell pepper, chopped onion, and a pinch of salt and pepper.
  3. Pour the sauce mixture over the chicken in the crockpot, ensuring it’s evenly coated.
  4. Cover and cook on low for 6-8 hours, or until the chicken is tender and shreds easily.
  5. Once cooked, use two forks to shred the chicken and stir it back into the sauce.
  6. Serve hot over cooked rice or noodles.

Notes

For a thicker sauce, mix a tablespoon of cornstarch with water and stir it in during the last hour of cooking. Consider using pre-cut vegetables for quicker prep.
