- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute (Diced zucchini or bell pepper)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, combine the rice, chicken broth, salt, and pepper. Mix well.
- Place the chicken breasts on top of the rice mixture. Drizzle olive oil over the chicken and season with additional salt and pepper as desired.
- Cover the baking dish tightly with foil and bake for about 30 minutes.
- While the chicken cooks, prepare the tzatziki by mixing Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and paprika in a bowl. Adjust seasoning to taste.
- After 30 minutes, remove the foil and bake for an additional 10-15 minutes or until the chicken is cooked through and the rice is fluffy.
- Let it rest for a few minutes before serving. Combine with the homemade tzatziki sauce and enjoy!
Notes
Pair with side salads and warm pita. For storage, keep in an airtight container in the refrigerator for up to three days.
