  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 1 lemon (juice and zest)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Flatten the chicken breasts to about 1/2 inch thick and season with salt and pepper.
  2. Mix flour with salt and pepper in a shallow dish.
  3. In another bowl, whisk together eggs, milk, and Parmesan cheese.
  4. Dredge the chicken in the flour mixture, shaking off excess, before dipping it into the egg mixture.
  5. Heat the olive oil and butter in a skillet over medium heat.
  6. Cook the chicken until golden brown, about 3-4 minutes per side.
  7. Remove the chicken and set it aside.
  8. Sauté the garlic until fragrant, then add lemon juice and zest, scraping the skillet to deglaze.
  9. Return the chicken to the skillet, cook for an additional 2 minutes, spooning the sauce over the top.
  10. Garnish with fresh parsley and serve hot.

Notes

For an extra crispy crust, allow the flour-coated chicken to rest for 10-20 minutes before frying. Add capers for a classic piccata style.
