  • 1 pound ground beef (80/20)
  • 5 cloves garlic (minced)
  • ½ teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 25 ounces tomato basil pasta sauce
  • 28 ounces diced canned tomatoes
  • 4 cups chicken broth (more if needed)
  • 2 teaspoons kosher salt (divided or more to taste)
  • 12 lasagna noodles (uncooked and broken into 2″ pieces)
  • ½ cup heavy cream (optional)
  • 1 cup shredded mozzarella cheese
  • ½ cup parmesan cheese (freshly grated)
  • ½ cup ricotta cheese
  • 6 tablespoons fresh basil (finely chopped)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the finely diced onion and cook until soft (about 3-5 minutes).
  2. Add the ground beef and break it apart with a wooden spoon, cooking until browned (about 5-7 minutes).
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add red pepper flakes, 1 teaspoon kosher salt, oregano, and tomato paste; mix well.
  5. Pour in the tomato basil pasta sauce, diced canned tomatoes, and chicken broth; stir to combine.
  6. Bring the mixture to a boil, then add the broken lasagna noodles, stirring to ensure they submerge.
  7. Add the remaining salt, reduce heat, and simmer until noodles are tender (about 10-15 minutes).
  8. Stir in heavy cream (if using) and adjust thickness with more chicken broth if needed.
  9. For extra cheesiness, stir in shredded mozzarella or parmesan.
  10. Serve hot, topped with ricotta, mozzarella, parmesan, and fresh basil.
