- 8 corn tortillas
- 2 cups shredded cheese
- 1 lb ground beef
- 1 can (15 oz) canned beans
- 2 cups enchilada sauce
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef with chopped onion and minced garlic until browned. Drain any extra fat.
- Season the mixture with cumin, salt, and pepper. Stir in the canned beans and mix well.
- In a baking dish, layer corn tortillas, the beef and bean mixture, and cheese. Repeat layers as desired.
- Pour enchilada sauce over the top layer and sprinkle with more cheese.
- Bake in the oven for about 25-30 minutes or until bubbly and golden.
- Let cool for a few minutes before serving.
Notes
You can customize the spice level, add vegetables, or switch the beans for a new flavor.
