- 8 ounces pasta of choice
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 tablespoon thyme leaves
- Salt and pepper to taste
- 1 cup grated Gruyère cheese
- Fresh parsley for garnish
Instructions
- Cook the pasta according to the package instructions. Once done, drain it and set aside.
- In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes, stirring occasionally.
- Once the onions are golden, add the minced garlic and cook for an additional minute.
- Pour in the broth, and add thyme, salt, and pepper. Bring to a gentle simmer and cook for 10 minutes.
- Add the cooked pasta to the skillet and stir well to coat in the onion-broth mix.
- Transfer the mixture to a baking dish, sprinkle Gruyère cheese on top, and broil for 3-5 minutes until bubbly and golden.
- Remove from the oven, garnish with parsley, and serve hot.
Notes
For variations, consider adding grilled chicken or sautéed mushrooms for extra heartiness. This dish can be made gluten-free by using gluten-free pasta.
