  • 1/2 cup milk
  • 1/2 cup cheese (optional; consider cheddar or feta)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté the diced potatoes in olive oil until tender, about 10 minutes.
  3. Add the diced red peppers and chopped spinach, cooking until the spinach wilts.
  4. In a separate bowl, whisk together the eggs, milk, salt, and pepper.
  5. Pour the egg mixture over the vegetable medley in the skillet.
  6. Cook until the edges start to set, then transfer to the oven.
