- 1/2 cup milk

Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, sauté the diced potatoes in olive oil until tender, about 10 minutes.
- Add the diced red peppers and chopped spinach, cooking until the spinach wilts.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture over the vegetable medley in the skillet.
- Cook until the edges start to set, then transfer to the oven.
- Bake for 15-20 minutes or until the frittata is fully set and golden on the edges.
- Allow to cool slightly, then slice and serve warm.
Notes
For a fluffier frittata, whisk the eggs longer to incorporate more air. Use a non-stick skillet for easier serving.
