A quick and nutritious pasta dish featuring broccoli, perfect for busy weeknights.
Ingredients

- 8 oz pasta (whole grain or your choice)
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Boil water in a large pot and add the pasta according to package instructions.
- In the last 3 minutes of cooking the pasta, toss in the broccoli florets.
- Drain the pasta and broccoli but reserve a bit of the pasta water.
- Heat olive oil in a large skillet over medium heat and sauté minced garlic until fragrant (approximately 1 minute).
- Add the drained pasta and broccoli to the skillet, tossing to coat with the garlic oil. If the mixture seems dry, add a splash of the reserved pasta water.
- Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese if desired.
Notes
For added flavor, try adding red pepper flakes or lemon zest before serving. Substitute other veggies for broccoli if desired.
