Easy Healthy Broccoli Pasta

Description

A quick and nutritious pasta dish featuring broccoli, perfect for busy weeknights.


Ingredients

  • 8 oz pasta (whole grain or your choice)
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Boil water in a large pot and add the pasta according to package instructions.
  2. In the last 3 minutes of cooking the pasta, toss in the broccoli florets.
  3. Drain the pasta and broccoli but reserve a bit of the pasta water.
  4. Heat olive oil in a large skillet over medium heat and sauté minced garlic until fragrant (approximately 1 minute).
  5. Add the drained pasta and broccoli to the skillet, tossing to coat with the garlic oil. If the mixture seems dry, add a splash of the reserved pasta water.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with Parmesan cheese if desired.

Notes

For added flavor, try adding red pepper flakes or lemon zest before serving. Substitute other veggies for broccoli if desired.
