Description

Quick and delicious Mongolian ground beef served over noodles, perfect for busy weeknights.

Ingredients

Scale
  • 8 oz (225g) noodles (spaghetti, udon, or rice noodles)
  • 1 lb (450g) ground beef
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • ¼ cup soy sauce (or tamari for gluten-free)
  • ¼ cup brown sugar
  • ½ cup beef broth
  • 1 tbsp hoisin sauce
  • 1 tbsp cornstarch (mixed with 2 tbsp water)
  • ½ tsp red pepper flakes (optional)
  • ½ cup green onions, chopped
  • 1 tbsp sesame seeds (for garnish)

Instructions

  1. Cook the Noodles: Bring a pot of salted water to a boil and cook the noodles according to the package instructions. Drain and set them aside.
  2. Cook the Beef: In a large pan, heat the vegetable oil over medium-high heat. Add the ground beef and cook until it’s browned, breaking it apart with a spatula. Drain any excess fat.
  3. Sauté Aromatics: Toss in the minced garlic and ginger, giving them about a minute to become fragrant.
  4. Make the Sauce: In a bowl, whisk together the soy sauce, brown sugar, beef broth, hoisin sauce, and red pepper flakes. Pour this mixture into the beef and stir well.
  5. Thicken the Sauce: Add the cornstarch slurry to the pan, mixing it in. Allow the sauce to simmer until it thickens.
  6. Combine with Noodles: Add the drained noodles to the beef and sauce, tossing everything until the noodles are well-coated.
  7. Garnish and Serve: Top off your dish with chopped green onions and sesame seeds before serving.

Notes

Feel free to customize with extra vegetables or adjust the spice level with red pepper flakes.
