Description
A cozy dish that balances savory flavors with a hint of sweetness, perfect for a quick weeknight dinner or family gatherings.
Ingredients
Scale
- 1 medium butternut squash, peeled and diced
- 1 lb ground turkey (or substitute with lean beef or vegetarian crumbles)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 onion, chopped
- 1 bell pepper, chopped
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, toss the diced butternut squash with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.
- Spread the squash onto a baking sheet in a single layer. Roast for 25-30 minutes, or until tender and golden-brown.
- While the squash is roasting, heat a skillet over medium heat. Sauté the chopped onion and bell pepper until softened, about 5-7 minutes.
- Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through, about 8-10 minutes.
- Once the squash is ready, combine it with the turkey and vegetable mixture. Stir gently to combine everything.
- Serve warm, garnished with fresh herbs if desired.
