  • 4 tbsp unsalted butter
  • 23 cloves of garlic (minced)
  • 1 medium shallot (finely diced)
  • 1 tsp kosher salt
  • Fresh cracked black pepper to taste
  • 23 sprigs fresh thyme
  • 1 ½ cups heavy cream
  • 1 cup shredded parmesan cheese

Instructions

  1. Preheat your oven to 400°F and lightly grease a baking dish, setting it aside.
  2. In a large mixing bowl, add the sliced sweet potatoes.
  3. Heat the unsalted butter in a small saucepan over medium-high heat. Once melted, add in the minced garlic and diced shallot. Sauté for 2-3 minutes or until fragrant.
  4. Stir in the fresh thyme, kosher salt, and cracked black pepper, removing the saucepan from the heat after everything is combined.
  5. Mix in the heavy cream and parmesan cheese until the cheese is melted into the sauce.
  6. Pour the cream mixture over the sweet potatoes and gently toss to combine.
  7. Arrange the potato slices upright in the prepared baking dish, drizzling on any remaining cream sauce.
  8. Bake for 50-60 minutes, or until the sweet potatoes are fork-tender. Serve immediately, garnished with additional fresh thyme.
