- 2–3 medium sweet potatoes (peeled and thinly sliced)
- 4 tbsp unsalted butter
- 2–3 cloves of garlic (minced)
- 1 medium shallot (finely diced)
- 1 tsp kosher salt
- Fresh cracked black pepper to taste
- 2–3 sprigs fresh thyme
- 1 ½ cups heavy cream
- 1 cup shredded parmesan cheese
Instructions
- Preheat your oven to 400°F and lightly grease a baking dish, setting it aside.
- In a large mixing bowl, add the sliced sweet potatoes.
- Heat the unsalted butter in a small saucepan over medium-high heat. Once melted, add in the minced garlic and diced shallot. Sauté for 2-3 minutes or until fragrant.
- Stir in the fresh thyme, kosher salt, and cracked black pepper, removing the saucepan from the heat after everything is combined.
- Mix in the heavy cream and parmesan cheese until the cheese is melted into the sauce.
- Pour the cream mixture over the sweet potatoes and gently toss to combine.
- Arrange the potato slices upright in the prepared baking dish, drizzling on any remaining cream sauce.
- Bake for 50-60 minutes, or until the sweet potatoes are fork-tender. Serve immediately, garnished with additional fresh thyme.
Notes
For a lighter dish, substitute heavy cream with half-and-half. Consider adding crispy breadcrumbs or a sprinkle of cheese for extra texture.
