- 4 tbsp evaporated milk or coconut milk (for vegan version)
Instructions
- Blend the diced mango chunks in a blender until smooth; strain for extra smoothness if desired.
- Mix cold water with gelatin in a small bowl, letting it sit to bloom.
- In a large mixing bowl, whisk together the mango puree, sugar, and coconut milk.
- Heat the mixture gently in a pot and add the bloomed gelatin, stirring until dissolved.
- Pour into serving bowls or molds and refrigerate for at least 6 hours or overnight to set.
- Serve chilled and enjoy!
Notes
For serving, consider drizzling with extra coconut milk or topping with fresh fruit, whipped cream, or toasted coconut flakes. Store covered in the fridge for up to three days.
