Instructions

  1. Blend the diced mango chunks in a blender until smooth; strain for extra smoothness if desired.
  2. Mix cold water with gelatin in a small bowl, letting it sit to bloom.
  3. In a large mixing bowl, whisk together the mango puree, sugar, and coconut milk.
  4. Heat the mixture gently in a pot and add the bloomed gelatin, stirring until dissolved.
  5. Pour into serving bowls or molds and refrigerate for at least 6 hours or overnight to set.
  6. Serve chilled and enjoy!
