- 2 pounds beef chuck roast
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, sliced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 cup frozen peas
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
- Fresh parsley, for garnish
Instructions
- Season the beef chuck roast with salt and pepper.
- In a slow cooker, combine the sliced onion, minced garlic, beef broth, Worcestershire sauce, and soy sauce.
- Add the beef roast to the slow cooker, ensuring it is submerged in the liquid.
- Add chopped carrots and celery to the slow cooker.
- Cover and cook on low for 8-10 hours or until the beef is fork-tender.
- If using, mix cornstarch and water in a small bowl until smooth, then stir into the slow cooker during the last 30 minutes of cooking to thicken the sauce.
- Stir in frozen peas and let them warm through before serving.
- Serve hot, garnished with fresh parsley.
Notes
Great with mashed potatoes or crusty bread. Leftovers keep well and taste even better the next day.
