A quick and easy meal that captures the flavors of a classic egg roll without the fuss of rolling and frying.

- 2 tablespoons olive oil (divided)
- 1 pound ground turkey
- 1 small sweet onion, finely diced
- 1 cup shredded carrots
- 3 garlic cloves, finely minced
- 1 teaspoon finely minced fresh ginger
- ¼ cup chicken broth
- 1 small head cabbage (about 8 cups shredded)
- 3 tablespoons soy sauce or tamari
- 1 tablespoon rice vinegar
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon toasted sesame oil
- Cooked white rice (for serving)
- Green onions, thinly sliced (green parts only)
- Toasted sesame seeds (for garnish)
- Sriracha Mayo (optional for added spice)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the ground turkey and cook until nearly done, approximately 5-6 minutes.
- Move the turkey to one side of the skillet. In the cleared side, pour in the remaining olive oil and add the chopped onion. Sauté for 3-4 minutes, stirring occasionally.
- Incorporate the shredded carrots, garlic, and ginger, cooking for another 2 minutes while stirring frequently.
- Add the chicken broth, scraping up any brown bits from the bottom of the pan for extra flavor.
- Stir in the cabbage, soy sauce, rice vinegar, salt, and pepper. Mix everything well and cover. Reduce heat to medium-low, allowing it to cook for 12-15 minutes or until the cabbage reaches your desired tenderness.
- Remove from the heat and drizzle with toasted sesame oil.
- Serve over cooked white rice, if desired, and garnish with green onions, toasted sesame seeds, and Sriracha mayo for a spicy kick!
Notes
This dish can be customized with additional vegetables like bell peppers or snap peas, and serves well over rice or on its own for a low-carb option.
