Description

A quick and easy meal that captures the flavors of a classic egg roll without the fuss of rolling and frying.


Ingredients

  • 2 tablespoons olive oil (divided)
  • 1 pound ground turkey
  • 1 small sweet onion, finely diced
  • 1 cup shredded carrots
  • 3 garlic cloves, finely minced
  • 1 teaspoon finely minced fresh ginger
  • ¼ cup chicken broth
  • 1 small head cabbage (about 8 cups shredded)
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil
  • Cooked white rice (for serving)
  • Green onions, thinly sliced (green parts only)
  • Toasted sesame seeds (for garnish)
  • Sriracha Mayo (optional for added spice)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the ground turkey and cook until nearly done, approximately 5-6 minutes.
  2. Move the turkey to one side of the skillet. In the cleared side, pour in the remaining olive oil and add the chopped onion. Sauté for 3-4 minutes, stirring occasionally.
  3. Incorporate the shredded carrots, garlic, and ginger, cooking for another 2 minutes while stirring frequently.
  4. Add the chicken broth, scraping up any brown bits from the bottom of the pan for extra flavor.
  5. Stir in the cabbage, soy sauce, rice vinegar, salt, and pepper. Mix everything well and cover. Reduce heat to medium-low, allowing it to cook for 12-15 minutes or until the cabbage reaches your desired tenderness.
  6. Remove from the heat and drizzle with toasted sesame oil.
  7. Serve over cooked white rice, if desired, and garnish with green onions, toasted sesame seeds, and Sriracha mayo for a spicy kick!

Notes

This dish can be customized with additional vegetables like bell peppers or snap peas, and serves well over rice or on its own for a low-carb option.
