Description

Ingredients

  • 2 tablespoons olive oil (divided)
  • 1 pound ground turkey
  • 1 small sweet onion (finely diced)
  • 1 cup shredded carrots
  • 3 garlic cloves (finely minced)
  • 1 teaspoon finely minced fresh ginger
  • ¼ cup chicken broth
  • 1 small head cabbage (about 8 cups shredded)
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil
  • Cooked white rice (for serving)
  • Green onions (green parts only, thinly sliced)
  • Toasted sesame seeds
  • Sriracha mayo (optional)

Instructions

  1. In a large skillet over medium heat, add 1 tablespoon olive oil.
  2. Add the ground turkey and cook until it’s almost fully cooked through, about 5-6 minutes.
  3. Push the turkey to one side of the pan, and add the diced onion along with the remaining oil. Sauté for 3-4 minutes, stirring occasionally.
  4. Stir in shredded carrots, garlic, and ginger; cook for another 2 minutes, mixing everything well.
  5. Add the chicken broth and scrape up any brown bits from the skillet.
  6. Add cabbage, soy sauce, rice vinegar, salt, and black pepper. Stir thoroughly, cover, and reduce heat to medium-low. Cook for 12-15 minutes or until the cabbage is tender to your liking.
  7. Remove from heat, then drizzle with toasted sesame oil.
  8. Plate the egg roll in a bowl over white rice, and top with green onions, toasted sesame seeds, and sriracha mayo if desired.

Notes

This recipe is adaptable; feel free to swap ground turkey for ground chicken or tofu for a vegetarian option.
