Description

A comforting Italian-inspired dish featuring poached eggs in a rich tomato sauce, perfect for any meal.

Ingredients

Scale
  • 4 large eggs
  • 2 cups of tomato sauce
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of red pepper flakes
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Sauté the aromatics: Heat the olive oil in a skillet over medium heat. Add the minced garlic and red pepper flakes, and sauté for about a minute, until fragrant.
  2. Create the sauce: Pour in the tomato sauce, and season with salt and pepper. Let it simmer for 5-10 minutes.
  3. Add the eggs: Make small wells in the sauce and crack an egg into each one. Cover the skillet and cook for 5-7 minutes, until the egg whites are set but the yolks remain runny.
  4. Garnish and serve: Finish with fresh basil or parsley before enjoying this delightful dish.

Notes

Serve with crusty bread and mixed greens. For a twist, add feta cheese or ricotta.
