Description

A delightful dish combining flaky puff pastry, gooey eggs, and sautéed spinach, perfect for brunch or dinner.


Ingredients

  • 1 sheet of puff pastry
  • 2 cups fresh spinach, chopped
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 4 large eggs
  • Salt and pepper to taste
  • Grated cheese (optional, such as Parmesan or Gruyère)
  • Cooking spray or butter for greasing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut it into rounds that fit into a greased muffin tin.
  3. Lightly grease the muffin tin and place the pastry rounds into each cup.
  4. Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until they are translucent.
  5. Stir in the chopped spinach and cook until it’s wilted. Season with salt and pepper to taste.
  6. Spoon the spinach mixture into each pastry shell.
  7. Crack one egg into each pastry shell on top of the spinach. If you wish, sprinkle some cheese on top for extra flavor.
  8. Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set and the pastry is golden brown.
  9. Allow to cool for a few minutes before carefully removing them from the muffin tin.
  10. Serve warm and enjoy your delightful Eggs Napoleon!

Notes

These pastry cups can stand alone but taste even better with a light salad or roasted tomatoes. Brush tops with beaten egg before baking for a golden finish.
