A delightful dish combining flaky puff pastry, gooey eggs, and sautéed spinach, perfect for brunch or dinner.

- 1 sheet of puff pastry
- 2 cups fresh spinach, chopped
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- 4 large eggs
- Salt and pepper to taste
- Grated cheese (optional, such as Parmesan or Gruyère)
- Cooking spray or butter for greasing
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface and cut it into rounds that fit into a greased muffin tin.
- Lightly grease the muffin tin and place the pastry rounds into each cup.
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until they are translucent.
- Stir in the chopped spinach and cook until it’s wilted. Season with salt and pepper to taste.
- Spoon the spinach mixture into each pastry shell.
- Crack one egg into each pastry shell on top of the spinach. If you wish, sprinkle some cheese on top for extra flavor.
- Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set and the pastry is golden brown.
- Allow to cool for a few minutes before carefully removing them from the muffin tin.
- Serve warm and enjoy your delightful Eggs Napoleon!
Notes
These pastry cups can stand alone but taste even better with a light salad or roasted tomatoes. Brush tops with beaten egg before baking for a golden finish.
