Description

Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherries, pitted and halved
  • 1 cup chocolate ganache
  • Chocolate curls for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the eggs and granulated sugar until the mixture is pale and thick.
  3. Sift together the flour, cocoa powder, and salt, then gently fold this mixture into the egg blend.
  4. Spread the batter evenly onto the prepared baking sheet and bake for about 12-15 minutes or until a toothpick inserted comes out clean.
  5. Once out of the oven, invert the cake onto a kitchen towel dusted with powdered sugar and gently peel off the parchment paper.
  6. Roll the cake up with the towel tightly and let it cool completely in this shape.
  7. While it cools, whip together the heavy cream, powdered sugar, and vanilla until you achieve stiff peaks.
  8. Unroll the cooled cake and evenly spread the whipped cream on top, then scatter the halved cherries over the cream.
  9. Carefully roll the cake back up without the towel and place it seam-side down on your serving platter.
  10. Pour the chocolate ganache over the roll and decorate with chocolate curls for a stunning finish.
  11. Chill for a bit before serving.

Notes

Serve chilled for the best flavor and consider adding fresh mint or ice cream as a side.
