- 4 large eggs
- 1/2 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup cherries, pitted and halved
- 1 cup chocolate ganache
- Chocolate curls for garnish
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the eggs and granulated sugar until the mixture is pale and thick.
- Sift together the flour, cocoa powder, and salt, then gently fold this mixture into the egg blend.
- Spread the batter evenly onto the prepared baking sheet and bake for about 12-15 minutes or until a toothpick inserted comes out clean.
- Once out of the oven, invert the cake onto a kitchen towel dusted with powdered sugar and gently peel off the parchment paper.
- Roll the cake up with the towel tightly and let it cool completely in this shape.
- While it cools, whip together the heavy cream, powdered sugar, and vanilla until you achieve stiff peaks.
- Unroll the cooled cake and evenly spread the whipped cream on top, then scatter the halved cherries over the cream.
- Carefully roll the cake back up without the towel and place it seam-side down on your serving platter.
- Pour the chocolate ganache over the roll and decorate with chocolate curls for a stunning finish.
- Chill for a bit before serving.

Serve chilled for the best flavor and consider adding fresh mint or ice cream as a side.
