  • 1 small onion, finely chopped
  • Salt and pepper to taste
  • 1 cup crushed buttery crackers (like Ritz)
  • ½ cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, shredded cheddar cheese (reserve ½ cup for topping), mixed vegetables, and chopped onion. Season with salt and pepper.
  3. Pour the mixture into a greased 9×13-inch baking dish.
  4. In a separate bowl, combine crushed crackers with melted butter. Mix until well combined and sprinkle evenly over the chicken mixture.
