- 4 cups cooked and shredded chicken
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese (plus an additional ½ cup for topping)
- 2 cups mixed vegetables (optional)
- 1 small onion, finely chopped
- Salt and pepper to taste
- 1 cup crushed buttery crackers (like Ritz)
- ½ cup melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, shredded cheddar cheese (reserve ½ cup for topping), mixed vegetables, and chopped onion. Season with salt and pepper.
- Pour the mixture into a greased 9×13-inch baking dish.
- In a separate bowl, combine crushed crackers with melted butter. Mix until well combined and sprinkle evenly over the chicken mixture.
- Bake for 30-35 minutes, or until bubbly and golden brown on top. Let it cool for a few minutes before serving.
Notes
For extra flavor, try sautéing the onions in olive oil before adding to the mixture. For a Tex-Mex twist, include black beans and taco seasoning.
