Delicious birria tacos filled with tender beef and served with savory dipping consomé, perfect for gatherings or cozy nights in.
Ingredients

- 2 lbs beef chuck or brisket
- 2 dried guajillo chilies
- 2 dried ancho chilies
- 1 onion, quartered
- 4 cloves garlic
- 2 tsp cumin
- 2 tsp oregano
- 4 cups beef broth
- Salt and pepper to taste
- Corn tortillas
- Oaxacan cheese (or substitute with mozzarella)
- Fresh cilantro, chopped
- Lime wedges
Instructions
- Soak the chilies in hot water for about 15 minutes until softened.
- Blend the chilies with onion, garlic, cumin, oregano, and a bit of beef broth until smooth.
- Sear the beef in a large pot, seasoning with salt and pepper.
- Combine the chili mixture and remaining beef broth in the pot, bringing it to a boil.
- Braise the beef for 3-4 hours until it’s super tender.
- Shred the beef and keep it warm.
- Assemble tacos by dipping corn tortillas in consomé, adding cheese and shredded beef, and folding.
- Fry the tacos in a skillet until crispy and cheese is melted.
- Serve with fresh cilantro, lime, and a side of consomé.
Notes
For added flavor, marinate the beef overnight. Enjoy these tacos with pickled onions or jalapeños for an extra kick.
