Description

Delicious birria tacos filled with tender beef and served with savory dipping consomé, perfect for gatherings or cozy nights in.


Ingredients

  • 2 lbs beef chuck or brisket
  • 2 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 tsp cumin
  • 2 tsp oregano
  • 4 cups beef broth
  • Salt and pepper to taste
  • Corn tortillas
  • Oaxacan cheese (or substitute with mozzarella)
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Soak the chilies in hot water for about 15 minutes until softened.
  2. Blend the chilies with onion, garlic, cumin, oregano, and a bit of beef broth until smooth.
  3. Sear the beef in a large pot, seasoning with salt and pepper.
  4. Combine the chili mixture and remaining beef broth in the pot, bringing it to a boil.
  5. Braise the beef for 3-4 hours until it’s super tender.
  6. Shred the beef and keep it warm.
  7. Assemble tacos by dipping corn tortillas in consomé, adding cheese and shredded beef, and folding.
  8. Fry the tacos in a skillet until crispy and cheese is melted.
  9. Serve with fresh cilantro, lime, and a side of consomé.

Notes

For added flavor, marinate the beef overnight. Enjoy these tacos with pickled onions or jalapeños for an extra kick.
