- 1 lb ground chicken
- 1 inch fresh ginger, grated
- 1 garlic clove, minced
- 1 tsp garam masala
- 1 tsp cumin
- 1/2 tsp turmeric
- 1/2 tsp chili powder
- 1/2 cup breadcrumbs
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- 1 can (13.5 oz) coconut milk
- 2 tbsp tomato paste
- 1 tbsp lime juice
Instructions
- Preheat the oven to 400°F (200°C).
- Mix ground chicken, grated ginger, minced garlic, garam masala, cumin, turmeric, chili powder, breadcrumbs, cilantro, salt, and pepper until well blended.
- Shape the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until the meatballs are cooked through and golden brown.
- Prepare the sauce by heating coconut milk, tomato paste, and lime juice in a saucepan over medium heat until simmering.
- Simmer the baked meatballs in the sauce for an additional 5-10 minutes.
- Serve warm, garnished with extra cilantro if desired.

To enjoy them with rice or warm naan, and feel free to add a side of steamed vegetables or a fresh salad.
