Description

Ingredients

  • 1 lb ground chicken
  • 1 inch fresh ginger, grated
  • 1 garlic clove, minced
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1/2 cup breadcrumbs
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp tomato paste
  • 1 tbsp lime juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix ground chicken, grated ginger, minced garlic, garam masala, cumin, turmeric, chili powder, breadcrumbs, cilantro, salt, and pepper until well blended.
  3. Shape the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes or until the meatballs are cooked through and golden brown.
  5. Prepare the sauce by heating coconut milk, tomato paste, and lime juice in a saucepan over medium heat until simmering.
  6. Simmer the baked meatballs in the sauce for an additional 5-10 minutes.
  7. Serve warm, garnished with extra cilantro if desired.
