Instructions
- Mash the banana until smooth.
- Combine with cottage cheese and eggs in a bowl and mix until well blended.
- Add baking powder, cinnamon, vanilla extract, and salt; fold in oat flour or rolled oats if desired.
- Let the batter rest for 3-5 minutes.
- Preheat a non-stick skillet over medium-low heat, greasing with butter or cooking spray.
- Pour approximately 2 tablespoons of batter for each pancake onto the skillet. Cook for 2-3 minutes on each side until golden brown.
