Description

Delicious bite-sized pancake poppers that are fluffy and easy to prepare, perfect for busy mornings.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or milk with a splash of vinegar)
  • 1 large egg
  • 2 tablespoons melted butter
  • Syrup or fruit for serving

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, mix the buttermilk, egg, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Don’t overmix!
  5. Fill each mini muffin cup about 2/3 full with batter.
  6. Bake for 10-12 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
  7. Allow to cool slightly before carefully removing from the pan.
  8. Serve warm with syrup, fresh fruits, or your favorite toppings.

Notes

To store leftovers, place them in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week. Reheat in the oven or microwave before serving.
