Delicious bite-sized pancake poppers that are fluffy and easy to prepare, perfect for busy mornings.
Ingredients

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk (or milk with a splash of vinegar)
- 1 large egg
- 2 tablespoons melted butter
- Syrup or fruit for serving
Instructions
- Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, mix the buttermilk, egg, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Don’t overmix!
- Fill each mini muffin cup about 2/3 full with batter.
- Bake for 10-12 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly before carefully removing from the pan.
- Serve warm with syrup, fresh fruits, or your favorite toppings.
Notes
To store leftovers, place them in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week. Reheat in the oven or microwave before serving.
