- 180 grams powdered sugar
- 1/4 teaspoon salt
- 120 grams large egg whites (at room temperature)
- 60 grams granulated sugar
- 4 drops liquid-gel food coloring
- 1 teaspoon pure vanilla extract
- Vanilla Buttercream Frosting (or your choice of filling)
Instructions
- Prep Your Piping Bag: Cut the tip off a large piping bag, fit it with a large plain tip, and fold over the sides while placing the bag in a tall glass.
- Combine Dry Ingredients: Sift the almond flour and powdered sugar together into a medium bowl and gently mix them.
- Prepare the Meringue: Wipe a large glass or metal bowl with vinegar or lemon juice. Add salt and egg whites, then whip until bubbles form. Gradually add granulated sugar while whipping for a shiny meringue with stiff peaks.
- Add Color and Flavor: Mix in the food coloring and vanilla extract.
- Incorporate Almond Mixture: Fold the dry ingredients into the meringue in three additions until fully combined.
- Pipe the Macarons: Transfer the batter to the piping bag and pipe rounds onto a prepared baking sheet, leaving space between each.
- Prep for Baking: Tap the baking sheet to smooth the tops and release air bubbles. Let the macarons rest for 30-60 minutes until they form a skin.
- Bake: Preheat your oven to 315°F (160°C) and bake for 12-15 minutes, checking for doneness.
- Cool and Fill: Let the shells cool fully before pairing and filling them.
Notes
Macarons can be stored in an airtight container in the refrigerator for up to a week. Allow them to come to room temperature before serving for best texture.
