Description

A comforting pasta dish inspired by the rich flavors of French onion soup, featuring caramelized onions and creamy Gruyère cheese.


Ingredients

  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper, to taste
  • 1 cup Gruyère cheese, grated
  • Parmesan cheese, for serving (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 20-30 minutes, stirring occasionally.
  2. Once the onions are caramelized, add the vegetable broth and thyme. Bring to a simmer.
  3. Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside.
  4. Combine the cooked pasta with the onion broth mixture, stirring to coat.
  5. Add the Gruyère cheese and mix until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with Parmesan cheese if desired.
