			- 8 oz pasta (your choice)
 - 2 large onions, thinly sliced
 - 2 tablespoons olive oil
 - 2 cups vegetable broth
 - 1 teaspoon thyme
 - Salt and pepper, to taste
 - 1 cup Gruyère cheese, grated
 - Parmesan cheese, for serving (optional)
 
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 20-30 minutes, stirring occasionally.
 - Once the onions are caramelized, add the vegetable broth and thyme. Bring to a simmer.
 - Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside.
 - Combine the cooked pasta with the onion broth mixture, stirring to coat.
 - Add the Gruyère cheese and mix until melted and creamy.
 - Season with salt and pepper to taste.
 - Serve hot, topped with Parmesan cheese if desired.
