- 4 large onions, thinly sliced
- 4 cups beef broth
- 1 cup dry white wine
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 bay leaf
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- Baguette slices
- 1 cup grated Gruyere cheese
- Salt and pepper to taste
Instructions
- In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions, salt, and sugar, and cook slowly for about 30-40 minutes, stirring often, until the onions are caramelized.
- Add the bay leaf, thyme, and white wine, scraping the bottom of the pot to release any browned bits. Let it simmer for 5 minutes.
- Pour in the beef broth and bring to a boil. Reduce heat and let it simmer for 20-30 minutes. Season with salt and pepper to taste.
- Preheat the oven broiler. Ladle the soup into oven-safe bowls, place a slice of baguette on top of each bowl, and sprinkle with Gruyere cheese.
- Place the bowls under the broiler for about 2-3 minutes, until the cheese is melted and bubbly.
- Serve hot and enjoy your comforting French Onion Soup!
