- ½ cup buttermilk (or yogurt)
- ¼ cup vegetable oil
- 1 large egg
- ½ cup chopped pecans (optional)
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Whisk well to ensure even distribution.
- In another bowl, whisk together buttermilk, vegetable oil, and egg until blended.
- Add the wet mixture to the dry ingredients. Mix just until combined, being careful not to overmix.
- Fold in the fresh cranberries, orange zest, and chopped pecans.
- Spoon the batter evenly into the prepared muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow them to cool for a few minutes before serving warm.
