Description

Delightful and fresh lemongrass beef spring rolls that bring a taste of Southeast Asia to your kitchen.


Ingredients

  • Rice paper wrappers
  • Tender beef (thinly sliced)
  • Fresh lemongrass (minced)
  • Carrots (julienned)
  • Cucumber (julienned)
  • Fresh herbs (mint, cilantro)
  • Lettuce leaves
  • Soy sauce (for dipping)
  • Chili sauce (optional, for dipping)

Instructions

  1. Prepare the ingredients by slicing your beef and vegetables and mincing the lemongrass.
  2. Cook the beef in a pan over medium heat, seasoning with salt and pepper until tender.
  3. Soak a rice paper wrapper in warm water for about 10 seconds or until it softens.
  4. Lay the softened wrapper on a clean surface.
  5. Place a few pieces of beef, a sprinkle of minced lemongrass, julienned carrots, cucumber, fresh herbs, and a lettuce leaf in the center.
  6. Fold the sides of the wrapper over the filling and roll tightly from bottom to top.
  7. Repeat until you’ve used up the wrappers and filling.
  8. Serve with soy sauce and chili sauce for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to two days. Use a damp paper towel between layers of rolls to keep them moist.
