Delightful and fresh lemongrass beef spring rolls that bring a taste of Southeast Asia to your kitchen.
Ingredients
- Rice paper wrappers
- Tender beef (thinly sliced)
- Fresh lemongrass (minced)
- Carrots (julienned)
- Cucumber (julienned)
- Fresh herbs (mint, cilantro)
- Lettuce leaves
- Soy sauce (for dipping)
- Chili sauce (optional, for dipping)
Instructions
- Prepare the ingredients by slicing your beef and vegetables and mincing the lemongrass.
- Cook the beef in a pan over medium heat, seasoning with salt and pepper until tender.
- Soak a rice paper wrapper in warm water for about 10 seconds or until it softens.
- Lay the softened wrapper on a clean surface.
- Place a few pieces of beef, a sprinkle of minced lemongrass, julienned carrots, cucumber, fresh herbs, and a lettuce leaf in the center.
- Fold the sides of the wrapper over the filling and roll tightly from bottom to top.
- Repeat until you’ve used up the wrappers and filling.
- Serve with soy sauce and chili sauce for dipping.
Notes
Store leftovers in an airtight container in the refrigerator for up to two days. Use a damp paper towel between layers of rolls to keep them moist.
