Description
A comforting combination of crispy potatoes and melted cheese, perfect for family dinners or weekend brunches.
Ingredients

- 400 g (1 pound) potatoes
- 50 g pancetta, cut into cubes (or 1 tbsp olive oil/lard)
- 160 g (5.6 oz) semi-hard cheese (Tolminc is excellent)
- 50 g (1.8 oz) hard cheese (another Tolminc works well)
- 2 tbsp fresh herbs (parsley, oregano, or lovage)
Instructions
- Peel and grate the potatoes, placing them in a bowl of cold water.
- Rinse the potatoes thoroughly until the water runs clear and set aside.
- Cut the pancetta into small cubes and combine both cheeses in a separate bowl.
- In a 22cm (9-inch) pan, heat the pancetta over medium heat for 3-4 minutes, adding a teaspoon of oil if using.
- Add the drained potatoes to the pan, arranging them evenly, and cook for 15-18 minutes, stirring continuously until tender.
- Stir in half of the cheese mixture until it melts, then add the remaining cheese and chosen herbs.
- Spread the Frika and cook for an additional 5 minutes.
- Transfer Frika to a plate, flip back into the pan, and cook until golden and crispy, about 5 more minutes.
- Serve warm, cut into slices, and optionally sprinkle with more fresh herbs.
Notes
Great paired with a green salad or roasted vegetables. Optional toppings include Greek yogurt, sour cream, balsamic reduction, or chili oil.
