Description

Delightful mini dessert cups made with creamy Greek yogurt, crunchy granola, and topped with fresh berries.


Ingredients

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 34 tbsp honey
  • 1 tsp vanilla extract
  • 1 1/2 cups Greek yogurt
  • Berries of choice for topping

Instructions

  1. In a mixing bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Mix until you have a sticky dough.
  2. Line a muffin pan with muffin liners. Scoop a spoonful of the granola mixture into each muffin cup, pressing down firmly to create a solid base.
  3. Dollop a generous spoonful of Greek yogurt on top of the granola layer in each cup.
  4. Decorate with chosen berries and any leftover granola.
  5. Place the muffin pan in the freezer to set for at least 4 hours, allowing them to thaw slightly before serving.

Notes

Can be stored in an airtight container in the freezer for up to 2 months. Allow to thaw before serving for better texture.
